A premium variety, which is not always available throughout the year. The seasonality of the Erica plant’s flowering and its sensitivity to micro-changes in the local climate often make its production unpredictable. It is a dense honey with a rich taste, where the spicy, woody notes of pine and the earthy scents of erica flowers stand out, subtly complemented by hints of caramel.
In the Sithonia peninsula, in Northern Greece, Erica plants, Thyme and a large variety of local Wildflower species grow next to Pine forests, by the Aegean coast. The local microclimate, formed by wind, humidity and generous sunshine, is essential for the production of a number of varieties of exclusive, intensely aromatic honey.
